Slice and dice the onions and tomatoes.
Toss the spinach and onions onto a pan on medium.
Stir occasionally. The spinach will wilt down to about 1 cup cooked.
Push the spinach and onions to the side.
Pour in scrambled eggs.
Add salt and pepper.
Stir the eggs and then mix in the greens.
Remove from heat, sprinkle cheese on top and cover to melt.
Start the toast.
Slice the avocado.
When the toast is done, the cheese should be melted.
Place the avocado, tomatoes, and spinach egg combo on the toast.
Remember to chew and to breathe. Enjoy!
